When i've cut down hollow core doors before, i've found i'm sometimes able to take the off cut, peel the outer surface off (a chisel usually helps) and slide the solid wood piece back into the gap in the door. Put your hand up if you don’t have any space on your floor plan for a laundry room (don’t be shy, i’m sure no one’s watching). Create an open space between lower laundry room cabinets, beneath the countertop.

My only question is, the added hinge for the top portion of the bottom half of the door (wow, that was a mouthful!), did you notch our the hinge on the doorframe as well as the door, or only the door and screwed it.
